Breakfast: Smoothies are my favorite way to start the day. They are fun to make and there are endless pairings for fresh fruits and veggies. Smoothies help keep my energy up while I dance and train. My favorite, delicious green smoothie is perfect for breakfast or a post workout snack and it is loaded with nutrients. The star ingredient here is Mango. I love mango's because they aid in digestion, boost immunity, and give you beautiful glowing skin!
Kara's Green Smoothie
1 mango
1 frozen banana - Fun Tip! Freezing bananas before blending creates a creamy texture to your smoothie.
A large handful of your favorite greens. My personal favorite is a mix of spinach, kale and baby chard.
1 cup of almond milk or any non-dairy milk of your choice
Blend together and Enjoy!
Lunch and Dinner I love making Buddha Bowls. Filled with different colors, tastes, and textures, they can be made according to whatever you're in the mood for. They are great option to help use some of your leftovers and are so easy to throw together! Buddha Bowls usually consist of a whole grain, raw vegetables, cooked vegetables, plant protein and healthy fats so get creative!

Wild Rice
Your favorite mix of greens
Cucumbers - chopped
Onions - chopped
Zucchini with garlic sautéed in avocado oil and coconut aminos. You can also use any cooking oil you prefer.
Boiled edamame
Top with sliced avocado
The best thing about Buddha Bowls is you choose your own measurements for ingredients. Toss all ingredients together and you end up with a colorful, creative bowl of delicious nutrients.
Snacks: Hummus is a vegan staple! It can be made as a savory treat or a sweet treat and eaten with fruits or vegetables. It's packed with plant protein, filled with ingredients that help fight inflammation, and is high in fiber. Beet hummus is a fabulous twist on a classic, not too mention the pretty pink color!
Kara's Beautiful Beet Hummus
1 small roasted beet
1 can chickpeas
2 cloves of garlic
Juice of 1 lemon
2 tablespoons tahini
2 tablespoons olive oil
Salt and pepper to taste
Blend all ingredients in a food processor or high speed blender. Paired with brightly colored vegetables, you end up with a bright, beautiful and refreshing snack.
